Try this Meghan Markle’s signature pasta dish with a delicious and tasty twist! This recipe can be made vegan or vegetarian style.
My Ingredients
- 4 large zucchini (green and yellow) chopped
- 4 cloves of garlic chopped
- 1 large yellow onion chopped
- ½ cup of water
- 1 to 2 bouillon cubes (chicken or vegetable)
- 1 lemon small juiced
- 1 cup of grated parmesan cheese
- ½ tsp of red pepper flakes or to taste
- 2 tbsp. of olive oil
- 1 box of your favorite pasta
Instructions
- Sautee zucchini in hot oil for 8 to 10 minutes
- Stir every 4 minutes so a crust can build on the zucchini
- Add onions and garlic
- Sautee for 3 to 5 minutes
- Add bouillon cube one at a time to control the taste
- Add water
- Add red pepper flakes
- Cook in the slower cooker for 60 minutes or on the stove with low heat for 4 hours
Once prepared, add the lemon juice and fold in the parmesan cheese (dairy or vegan)
